Mahi Fish Tacos

Mahi Tacos - Serves 2

8 oz fresh mahi mahi, sliced ½ inch strips
¼ cup achiote marinade
½ cup finely shredded green cabbage
¼ cup shredded carrot
¼ cup fresh chopped cilantro
4 flour tortillas
½ cup cilantro cream
1 lime

Marinate Mahi in achiote marinade overnight in a zip lock bag.
Sear Mahi over high heat in a cast iron skillet to lightly char the fish until cooked through.
Combine green cabbage, carrot and cilantro to make a slaw and set aside.
Lightly warm tortilla shells on surface of cast iron skillet.
Place fish onto tortillas, add slaw, season with a squeeze of lime juice and a drizzle of extra virgin olive oil.
Finish with a touch of cilantro cream.
Quarter a fresh lime to garnish with a sprig of fresh cilantro.

Achiote Marinade - combine ingredients and set aside
2 Tbsp prepared achiote paste (found at a Latin market)
2 tsp fresh orange juice
2 Tbsp blended oil
1 tsp fresh oregano finely chopped
1 tsp fresh garlic minced
1 tsp kosher salt
Cilantro Cream - combine ingredients and set aside.
½ cup sour cream
1 lime juiced
½ jalapeño finely diced
1 tsp kosher salt
